Keto Lunch, Meal #5: Chicken Suprême with Broccoli


Growing up my Grandmother used to make Chicken Suprême, and we all LOVED it! It's a traditional French dish (Suprêmes de Volaille aux Champignons) and one of my favorites. We used to call it "Chicken with Mushrooms". There are a variety of recipes online for this dish and I'm giving you my Grandmother's recipe + my additions. A little change is that I combined broccoli with the chicken to make a one pot meal and added in turkey bacon. My Grandmother would serve this dish with white rice and broccoli with Hollandaise sauce. It's sooo much better with the accompaniment of white rice, which soaks up the sauce.

Ingredients

1 lb chicken breast

1 lb mushrooms, cubed

1 small onion or 2-3 shallots

1 slice of turkey bacon, cubed

3/4 c chicken stock or bone broth

1/4 c white wine (Chablis works well)

1/4 c heavy cream

3 Tablespoons butter or ghee (for more richness use 1/2 stick)

2 Tablespoons flour or cornstarch (I omitted)

Himalayan pink salt

Black pepper

1-2 heads of broccoli trimmed and steamed in separate cookware

Directions

Slice chicken in quarters or thirds to allow for even cooking time. Salt and pepper both sides and set aside. In a large skillet on medium heat melt half of the butter and sauté onion and mushrooms, stirring occasionally. The idea is brown them a bit so this should take about 10 minutes. They will reduce. Once cooked, set aside in a bowl with any juice.

Place the heat on medium in the same large skillet and melt the rest of the butter. Add chicken and be mindful of overcrowding the pan. Turn the chicken once it's browned on the side down. Once the chicken is finished cooking add wine to deglaze. Simmer a few minutes on medium low. Add chicken broth, onions, mushrooms and turkey bacon and let this cook for a few more minutes. To add the cream and avoid curdling take pan off the heat and using a whisk, very slowly pour cream to broth. To make this easier you can remove some of the chicken and then place back into pan after you've added the cream.

To thicken the broth, add 1/4 of broth to a separate bowl and whisk in flour until combined. Pour mixture back into the pan. Add some broccoli and cook another few minutes on low heat, covered.

When serving, use a bowl and if you're not following keto layer rice on the bottom.
