Keto Dinner, Meal #14: Hot Chicken with Sautéed Asparagus & Avocado


Day 26: Dinner and Meal #14

I guess it's kind of a cheat day to cook fried chicken even though this is gluten free and low carb. The only carbs are in the buffalo sauce. I don't fry anything when I cook except for this meal. I'm allowed. Going 30 days without sweets or desserts of any kind (except berries) gives me the power to fry something and enjoy it.

I used almond flour, Himalayan salt, paprika and egg to bread the chicken. This was my first attempt to make any item "breaded" with almond flour and it was REALLY good. There is very little difference between the two and texture-wise this was perfect. I sautéed the blanched asparagus in butter and my herbs de Provence mixture. This was one of my favorite meals of the month. I love spicy foods and the nostalgic segment plus the low carb factor flew me over the edge of pleasure. I also love asparagus and avocado so win-win!

Growing up we had fried chicken, which we called "Hot Chicken" due to the buffalo sauce component on Sundays but definitely not every Sunday. It was always served with white river rice and sometimes corn and salad. SO GOOD! Apparently my Grandma Clara used to cook a lot of fried chicken and my Mom recalls but I don't have too much of a memory since in the 90's they cut back and everything was changed to low-fat and low-sugar (margarine, equal etc.). My Mom also said that Archie Moore's wings in New Haven probably influenced my Dad to make the fried boneless chicken breasts at home with hot sauce. He used to hang out there in the 90's.
